Pottage and Bread

Having seen pottage at Kentwell HB wanted to try making our own. We found an online site with Tudor recipes, and then adapted it a little to correspond with the ingredients we had available. Vegetables (parsnips, carrots, leeks, and marrowfat peas) were diced and stewed in vegetable stock. Oats were added, along with parsely and rosemary. Everything was slowly cooked. It actually tasted pretty good!

HB made Tudor-ish rolls to go with the pottage. It was fun letting the yeast bubble and then seeing how it caused the dough to rise.

Smartard

For pudding HB followed a recipe for Tudor Smartard. We're not quite sure how it was meant to turn out, but it tasted very nice. HB made a batter from 4 eggs, 50g of seived cottage cheese, 4 tsp double cream, and a few teaspoons of brown sugar. This mixture was then fried.
